It's Safe to Eat the Snow

I went to a Christmas Open House at my friend's this afternoon. Instead of the usual hostess gift of a bottle of wine or a box of Godiva Chocolates or flowers, I decided to make a cake to take along. I found this beautiful Snowball Cake in a Kraft email and thought it would be perfect.

It was really simple to make. Just take a greased mixing bowl and make a Devil's Food cake according to the box directions. Then mix together one block of cream cheese with 2 tbsp. of sugar and 1 egg. With the cake mixture still in the mixing bowl, put the cream cheese mixture on top in the middle. Then put the mixing bowl into a 350 degree oven for 1 hour and 5 minutes. Yep, it gets baked in the mixing bowl (just make sure your bowl is oven safe).

After it is done baking let it cool on a wire rack. In the mean time mix together with a wire whisk one 3.4 ounce of vanilla pudding, with 1/4 cup of powdered sugar and 1 cup of milk. Then stir in one container of Cool Whip and refrigerate until you are ready to ice the cake. When the cake is cooled, ice it completely and then take a bag of coconut and cover the cake.

OMG!! Yummy! And it so pretty! Everyone loved it and thought it was amazing. It was really so simple though. Go ahead and make it for your next party. People will think you are fab-u-lous!
